Blackberry Coconut Crush

An icy cold drink on a hot summer’s day that balances the refreshingly tart notes of blackberry with the sweetness of coconut. You deserve it.

Ingredients

  • A small handful of ripe blackberries (6, 7 blackberries)
  • Pinch of flakey salt
  • Crushed ice
  • 150ml coconut water
  • 1 tsp agave syrup
  • 1 ½ tablespoons coconut cream
  • Sprig of fresh dill

Equipment

  • Either a rolling pin/wooden mortar or muddler that will fit in your glass
  • Shaker bottle
  • Strainer

Method

  1. Add all but one of the blackberries into the bottom of your glass
  2. Sprinkle a small pinch of flakey salt over them
  3. Using your rolling pin (or other instrument), gently muddle (mash) the blackberries so they release their juices
  4. Top the glass to the brim with crushed ice
  5. Into the shaker bottle, add the remaining blackberry and all other ingredients. Shake vigorously till you see the liquid turning pale pink from the blackberry’s juices
  6. Strain content of the shaker into the glass
  7. Garnish with more dill and blackberries, and serve

This mocktail is inadvertently, yet delightfully vegan.
